Here you go btown02......lol

Sugar Free Chocolate Chip Cookies

1/2 C. softened margarine
1 egg
1 t. vanilla
1/4 C. non-fat dry milk
1/2 C. sugar Twin
1/4 C. water
1 C. flour
1/2 t. baking soda
2 ounce dietetic choc candy - diced

Cream together margarine and Sugar Twin. Add egg, vanilla, non-fat dry milk and water. Beat 1 minute at medium speed. Fold in chocolate candy.

Drop from teaspoon onto ungreased cookie sheet. Bake at 350 F. for 20-25 minutes.

Serving Size : 48

31 calories per cookie.

CHOCOLATE COCONUT COOKIES

24oz. semi-sweet chocolate chips
2 2/3 cups all purpose flour
1 tsp. baking soda
1tsp. salt
1 cup butter or margarine. softened
1 cup brown sugar packed
1/2 cup granulated sugar
1tsp. vanilla extract
3 eggs
1 package of coconut for baking

preheat to 375
(if you are using a convection oven like I do you may have to reduce heat by as much as 25 to 350)

Melt 2 cups of the chocolate chips. It is best to use a double broiler or a pot of simmering water of which on top you have a metal mixing bowl to melt the chocolate. Keep stirring until the chocolate is melted and is smooth.

In a seperate mixing bowl combine flour, baking soda and salt.

In another seperate large bowl beat butter, brown sugar, granulated sugar and vanilla till slightly creamed. Add eggs one at a time beating them into the mixture till well incorporated then adding the next one till all 3 are blended in.

Beat melted chocolate into the egg sugar mixture. Gradually beat in the flour mixture.

Stir in the rest of the chocolate chips and the package of coconut.

Drop rounded tablespoons onto a ungreased baking sheet.(Silicon baking sheets work the best) Black coated baking sheets tend to bake hot and burn.

Bake at 375(350 for convection) for 8-9 minutes or until cookis puff a bit. Cool for 5 minutes or until firmed enough to transport to wax paper.


I have an associates in Culinary Arts and was going to go for my bachelors until i started making more money with less hours in real estate. Anyways I was in a couple of bake sales for the school and this one was pretty close to the original to a lost recipe. Enjoy!

the classics

2 1/4 cups flour

1 teaspoon salt
1 cup butter, softened

Directions:
PREHEAT oven to 375 F.

COMBINE flour, baking soda and salt in small bowl. Beat butter, granulated sugar, brown sugar and vanilla in large mixer bowl until creamy. Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Stir in chips. Drop by rounded tablespoon onto ungreased baking sheets.

BAKE for 9 to 11 minutes or until golden brown.

they are better if you dont cook them all the way, or not at all :)

I'm a type 2 also, they didn't make my blood sugar go up that much. As with any food you just have to know when to say when, unless it's really good like cookies. :)

Diabetic Dessert Recipe: Brownies:

2 c. graham cracker crumbs (approximately 24 crackers)
1/2 c. chopped walnuts
3 oz. semi-sweet chocolate
1 1/2 tsp. Sweet-N-Low (6 packs)
1/4 tsp. salt
1 c. skim milk


Heat oven to 350 degrees. Place all ingredients in bowl; blend well. Bake in greased 8x8x2 pan for 30 minutes. Cut in 2-inch squares while warm.

panzermk2wife - My wife tried those brownies yesterday. I had make without the nuts (do not like walnuts). All I can say, is she made two trays. As of 6:30pm there are none left. My had two. The rest? Oh well! There were made to be eaten. Thanks Again!

CHOCOLATE CHIP BAR COOKIE (Diabetic)

1/3 c. butter
4 tsp. liquid sweetener or 6 pkgs. powdered sweetener
1 egg
2 tsp. vanilla
1/4 c. chopped nuts
1 tsp. soda
3/4 c. water
1/3 c. semi-sweet chocolate pieces

In small mixer bowl, combine sweetener, butter, egg and vanilla. Beat 1 1/2 minutes at high speed. Measure flour by lightly spooning into cup and leveling off. Add remaining ingredients except chocolate pieces and nuts. Blend well; beat 2 minutes at medium speed, scraping sides of bowl. Stir in chocolate pieces and nuts.
Pour batter into an ungreased 8 inch square baking pan. Bake at 375 degrees for 20-22 minutes. Cool. Cut into bars.

Makes 24 bars.



DIABETIC PEANUT BUTTER COOKIES

1/3 c. plain flour
1/4 tsp. baking soda
1/4 tsp. baking powder
Pinch of salt
2 tbsp. shortening
2 tbsp. peanut butter
1 tsp. Sweet 'n Low
1 egg, beaten

Mix and stir all ingredients in order (flour, baking soda, baking powder, salt, shortening, peanut butter and Sweet 'n Low). Add beaten egg and mix well. Drop by large teaspoon on greased cookie sheet. Bake at 350 degrees for 10 minutes.

A new recipe, no I have not had time to try it, not with 3 crazy children running around :D

Applesauce-Raisin Cookies (Diabetic)

Ingredients:

1/4 c vegetable oil
1/4 c sugar
1 egg
1 tsp vanilla
1/2 c unsweetened applesauce
1/2 c whole wheat flour
1/2 c unbleached flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/8 tsp cloves
1/2 c rolled oats
1/2 c raisins - dark or golden

Directions:

Cream the oil and sugar together. Add the egg and beat until light. Blend the vanilla and applesauce. Stir the flours, baking powder, baking soda, cinnamon, cloves, oats, and raisins into the creamed mixture. Blend well. Drop by teaspoonfuls onto lightly oiled baking sheets. Bake at 375 degrees for 10 minutes, cool on a wire rack.

Makes 24 (1 cookie) Servings.

Dietary Exchanges: 1/2 Fruit, 1/2 Fat

Nutrients Per Serving:
56 Calories
2 g Fat
10 g Carbohydrate
1 g Protein
47 mg Sodium
